As the days get a little warmer but weâre still craving something cozy, this carrot cake is the perfect in-between treat. Soft, naturally sweet, and packed with simple ingredients, it brings all the comfort of a classic dessertâwithout the heaviness.
Made with ripe bananas, oats, and warm spices, this recipe is as nourishing as it is delicious. And of course, it wouldnât be complete without that irresistible crunch on top.

Cake:
- 1 carrot, grated
- 2 medium ripe bananas, mashed
- 1/2 cup oats
- 2 cups milk
- 1/4 cup sugar
- Maple syrup or honey (to taste)
- 1 tsp vanilla (powder or extract)
- 1 tsp baking powder
- A pinch of cinnamon
- A pinch of nutmeg
- 1/4 cup chopped pecans
Frosting:
- 1/2 block cream cheese (softened)
- 1 1/2 cups yogurt
- 1 tsp vanilla
- 1 tbsp maple syrup or sugar
The Grand Finale:
A generous handful of Glazed Nuts for that perfect sweet crunch đ
đłÂ How to make it:
Preheat your oven to 350°F (175°C) and lightly grease a 9x9 pan.
In a large bowl, mash the bananas and mix in the grated carrot. Add oats, milk, sugar, vanilla, cinnamon, nutmeg, and maple syrup (or honey), stirring until everything is well combined.
Fold in the chopped pecans, then gently mix in the baking powder.
Pour the batter into your prepared pan and bake for 30â40 minutes, or until a toothpick inserted in the center comes out clean. Let it cool completely.
For the frosting, mix the cream cheese, yogurt, vanilla, and maple syrup until smooth and creamy. Spread over the cooled cake.
