Pumpkin Spice Cake with Glazed Nuts

Pumpkin Spice Cake with Glazed Nuts

Nothing says fall quite like the warm aroma of pumpkin spice baking in the oven.

Our Pumpkin Spice Cake is soft, moist, and filled with all the cozy flavours we love about the season. We added our Pumpkin Spice Glazed Nuts right into the batter for little bursts of crunch and flavour, then finished the cake with even more nuts on top.

It’s the perfect treat for a crisp fall afternoon, a cozy weekend at home, or sharing with friends over a cup of coffee.

Ingredients

2 cups (250g) all-purpose flour

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon salt

1 and 1/2 teaspoons ground cinnamon

2 teaspoons store-bought or homemade pumpkin pie spice

1 cup (240ml) canola or vegetable oil

4 large eggs

1 cup (200g) packed light or dark brown sugar

1/2 cup (100g) granulated sugar

1 (15 ounce) can pumpkin puree

1 and 1/2 teaspoons pure vanilla extract

½ cup Pumpkin Spice Glazed Nuts, roughly chopped

Instructions

  • Preheat the oven to 350°F (177°C). Grease a 9×13-inch baking pan and set aside.

  • Mix the dry ingredients. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice.

  • Mix the wet ingredients. In a separate bowl, whisk together the oil, eggs, brown sugar, granulated sugar, pumpkin purée, and vanilla extract until smooth and well combined.

  • Combine. Pour the wet ingredients into the dry ingredients and mix until completely combined. Be careful not to overmix.

  • Add the crunch. Gently fold in the chopped Pumpkin Spice Glazed Nuts, making sure they're evenly distributed throughout the batter.

  • Bake. Spread the batter evenly into the prepared pan and sprinkle the remaining Pumpkin Spice Glazed Nuts over the top. Bake for 30–36 minutes, or until a toothpick inserted into the centre comes out clean. If the top or edges begin browning too quickly, loosely cover the cake with aluminum foil.

  • Cool. Remove the cake from the oven and place the pan on a wire rack. Allow the cake to cool completely before slicing.

Serve and enjoy. Cut into squares and serve as is, or add a dollop of whipped cream for an extra cozy fall treat. 🎃🍁
